Health Benefits of Brojo Coffee

Coffee is full of naturally occurring antioxidants and nutrients.  In fact, drinking 3-4 cups of coffee per day has been shown to help cleanse the body of toxins and potentially mitigate the effects of aging on the brain.  The bummer for a lot of people is that they can’t get those health benefits because of coffee’s high acid content.

The reason hot water brewed coffee is so acidic and sometimes bitter is actually pretty simple.

  1. Coffee beans contain certain fatty acids that are only soluble in hot water.  The hot water pulls the acid out of the coffee and drags it into your cup.  That acidity can cause indigestion and in certain cases, do permanent damage to your stomach and teeth.
  2. Hot water also speeds up the oxidation process, causing the brew to seem even more bitter.

It’s obvious that heat is the enemy and the solution is clear.  If you eliminate the heat, then the fatty acids will stay in the beans and you can minimize oxidation.

There are basically two tried and true methods for making cold water brewed coffee.  (There are endless variations and we strongly encourage folks to play around once they get comfortable.  After all, that’s how we came up with Brojo Coffee!)

  1. Dutch/Kyoto Drip Coffee:  (Brojo Coffee is made using a process similar to Dutch brew).  Ice is placed in the top bowl and as it melts the water drips into the ground coffee in the middle bowl.  As the coffee beans soak, the pressure from each drop cause another to fall into the bowl at the bottom.  It takes 3 to 12 hours to make quality Dutch Brew.  The result is a strong coffee that is smooth and delicious.
  2.  Cold Brew Coffee is even easier to make.  You simply put ground coffee and water into a container like a mason jar.  Then throw that puppy in the fridge or just leave in on the counter.  12 to 24 hours later, you will have a highly caffeinated coffee concentrate.  Filter out the grounds with a paper filter or some cheese cloth and enjoy.  Remember that cold brew should be diluted before drinking as it can come out really strong.

This is all it takes to make coffee that is very in low acid and delicious.  The lack of acid gives the brew an almost sweet flavor.  This means you don’t have to load it up with a bunch of fat and sugar to get it down.  If you get rid of the acid and the need for cream and sugar then you have truly made a healthier cup of jo.
